shaved broccoli, apple & parmesan slaw
Feels suspiciously healthy but somehow tastes like you're eating chips and cheese
ingredients
2 heads broccoli
2 apples (Granny Smith or Pink Lady)
2 celery stalks
½ cup toasted walnuts, roughly chopped
Small handful flat-leaf parsley or chives, finely chopped
40g parmesan, finely microplaned
3 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey
Salt and freshly cracked black pepper
method
Using a sharp knife or mandoline, shave the broccoli florets and tender stems as finely as possible. You're aiming for a fluffy, slaw-like texture rather than chunky pieces.
Julienne or very thinly slice the apples and celery.
Place the broccoli, apple, celery and herbs in a large bowl and toss well.
Whisk together the olive oil, lemon juice, Dijon and honey. Season with salt and freshly cracked black pepper.
Pour the dressing over the slaw and toss thoroughly to coat.
Transfer to a serving platter and finish with the toasted walnuts, a generous snowfall of microplaned parmesan and plenty of freshly cracked black pepper.
