zucchini ribbons with peaches and goats cheese

the fancy salad equivalent of the summer days between chrissy and nye

ingredients

4 ripe peaches, sliced

4 zucchinis, shaved into ribbon zucchini

Juice of 1 lemon

2 tsp apple cider vinegar

4 tbsp olive oil

Salt and black pepper

Goat’s cheese

Fresh mint

method

  1. Slice peaches and ribbon zucchini.

  2. Toss the peaches and zucchini with lemon juice, apple cider vinegar, olive oil, a pinch of salt and crack of pepper.

  3. Transfer to serving platter, and dollop goats cheese all over.

  4. Finish with torn mint, extra olive oil and black pepper.
