zucchini ribbons with peaches and goats cheese
the fancy salad equivalent of the summer days between chrissy and nye
ingredients
4 ripe peaches, sliced
4 zucchinis, shaved into ribbon zucchini
Juice of 1 lemon
2 tsp apple cider vinegar
4 tbsp olive oil
Salt and black pepper
Goat’s cheese
Fresh mint
method
Slice peaches and ribbon zucchini.
Toss the peaches and zucchini with lemon juice, apple cider vinegar, olive oil, a pinch of salt and crack of pepper.
Transfer to serving platter, and dollop goats cheese all over.
Finish with torn mint, extra olive oil and black pepper.
