cornflake and white chocolate cookies

the childhood nostalgia cookie

ingredients

1 cup butter, softened
¾ cup white sugar
1 cup brown sugar
2 eggs
2 cups plain flour
¾ cup bread flour
1 tsp baking soda
1 tsp baking powder
2 cups white chocolate chunks
3 cups cornflakes, lightly crushed
Flaky salt

method

  1. Cream butter and sugars. Beat until pale, fluffy and creamy looking then add eggs and mix until glossy and smooth.

  2. Combine flours, baking soda, baking powder and add to wet ingredients.

  3. Fold through chopped white choc and cornflakes.

  4. Scoop balls onto a lined baking tray or roll into a log, wrap, freeze and slice thick rounds when ready to bake.

  5. Sprinkle with flaky salt and top with a few extra cornflakes.

  6. Bake at 200°C for about 10 minutes. Leave them on the tray to cool and to firm up slightly.
