green beans with whipped ricotta and everything bagel crumb

and said: “respectfully, no”

ingredients

500g green beans, trimmed

1 cup ricotta (fresh or tub, drained if watery)

Olive oil

Juice of half a lemon

Salt and pepper

1 cup panko breadcrumbs

2 tbsp everything bagel seasoning

More olive oil

(Home made everything bagel: combine sesame seeds, poppy seeds, dried garlic, dried onion, and flaky salt)

method

1. Whip ricotta, olive oil, lemon juice, salt and pepper until light and creamy. Chill until needed.

2. Cook green beans in boiling salted water for 2-3 minutes, until bright green and tender-crisp. Drain, then toss with a drizzle of olive oil.

3. Sprinkle panko on a tray. Top with everything bagel seasoning, some olive oil and mix well. Grill (stirring occasionally) until golden.

4. Spread the whipped ricotta onto a platter. Add the beans over the top, then cover generously with the everything bagel crunch. Drizzle with a little extra olive oil for shine.
