chłodnik ogórkowy (cold cucumber soup)

ingredients

4 large Lebanese cucumbers peeled and roughly chopped

2 cups thick Greek yoghurt (or half yoghurt, half kefir/buttermilk)

1 garlic clove, finely grated

Big handful fresh dill, chopped

2 spring onions, finely sliced

Juice of 1 lemon (or 2 tbsp white wine vinegar)

Salt and pepper

method

1. Blend half the cucumber with the yoghurt until smooth.

2. Stir in the remaining chopped cucumber, dill, spring onions, garlic, and lemon juice.

3. Season generously with salt and pepper.

4. Chill for at least 1 hour.

5. Serve cold with a drizzle of olive oil, radish, and soft eggs if you like.
