smashed potatoes with green sauce, baby capers and dill
the night I made this green sauce for my housemate,
she said: “you should become a chef” (and then I actually did)
ingredients
1 kg new potatoes
1 small red onion, finely diced
2 tbsp baby capers, drained
Fresh dill, chopped
1 cup raw cashews (soaked in hot water 30 mins, then drained)
1 garlic clove
1 cup mixed soft herbs (parsley, dill, chives, spring onion, basil - whatever you’ve got)
Juice of 1 lemon
3 - 4 tbsp olive oil
1/2 - 1 cup water (to loosen)
Salt & pepper
method
1. Boil new potatoes in salted water until just tender. Drain, then lightly smash so they split and flatten a little. Let dry out for about 15 mins, season and drizzle with olive oil then bake at 200C for about an hour.
2. Make the sauce: Blend soaked cashews, garlic, herbs, lemon juice, olive oil, and ½ cup water until smooth and creamy, adding more water as needed for a drizzleable consistency. Season well.
3. Smear sauce on a platter and lay your smashed potatoes on top. Garnish with red onion, dill, and capers and finish with a drizzle of olive oil and some extra salt and pepper.
