cold noodles with sweet and spicy peanut sauce
proof that dinner doesn’t
need to be warm to be hot
ingredients
4-6 packs ramen noodles, cooked & rinsed cold
2 cucumbers, sliced (on a mandolin!!! Do as I say not as I do)
3 spring onions, finely sliced
1 bunch coriander, roughly chopped
4 tbsp soy sauce
4 tbsp rice vinegar
2 tbsp maple syrup or honey
2 tbsp sesame oil
2 heaped tbsp peanut butter
1 clove garlic, grated
1 small knob ginger, grated
Fried shallots
Chilli crisp
method
1. Cook noodles, rinse under cold water until cool, drizzle with a little sesame oil.
2. Whisk dressing ingredients until smooth and glossy.
3. Toss noodles with cucumber, spring onion, coriander and dressing until coated.
4. Top with fried shallots and extra chilli crisp.
