pearl couscous with a zingy herb sauce
the side dish that keeps whispering:
“actually, I could be the main…”
ingredients
1 pack pearl couscous
1/2 bunch parsley
1/2 bunch dill
1 garlic clove
Zest + juice of 1 lemon
1 tbsp dijon mustard
1/3 cup Greek yoghurt or mayo
3 tbsp olive oil
Salt & black pepper
Parmesan or pecorino
method
1. Cook the couscous to packet instructions drain well, drizzle with olive oil and season with salt.
2. Blitz herbs, lemon zest and juice, garlic, yogurt/mayo sand olive oil until smooth. Adjust seasoning to taste. It should be bright and zippy.
3. Toss the warm couscous with the dressing until evenly coated and glossy.
4. Pile onto a serving platter. Shower with finely grated parm or pecorino.
