spicy fish sauce cucumber slap salad

hosting hack: serve a salad that literally
absorbs your seasonal anxiety

ingredients

4 Lebanese cucumbers

1 large garlic clove, grated or smashed

2 tbsp fish sauce

1 tbsp sesame oil

2 tbsp lime juice (about 1 lime)

2 tbsp chilli jam

To top: honey roasted peanuts, roughly chopped and chilli flakes

Big handful soft herbs like coriander, Thai basil, mint

method

  1. Slice the ends off cucumbers. Lay each on its side and smash with the flat of your knife until cracked and broken. Chop into irregular chunks. Add a pinch of salt and let them sit 5 minutes to draw out water. Drain off any excess liquid.

  2. In a bowl, whisk together: fish sauce, lime juice, garlic, chilli jam, sesame oil.

  3. Toss cucumbers in the dressing until fully coated. Add peanuts and herbs right before serving. Finish with a drizzle of sesame oil and a sprinkle of chilli flakes.
